Smoked Asparagus Spears

This easy recipe can be executed with your smoker or a traditional covered grill and is a great side dish to steaks or fish.

Makes approximately 6 servings

1 heaping tablespoons butter

3 cloves garlic, sliced thin

Salt to taste

1/4 teaspoon black pepper

1 onion, sliced

1 pound trimmed asparagus

If you are using a traditional grill light the coals and wait for them to burn down; this will take about 30 min.  While you wait for the coals to burn soak your wood chips per the instructions and proceed to preparing your asparagus.

Melt the butter in a small saucepan, stir in the garlic and cook over low heat until tender. Remove from the heat and stir in, salt, and pepper.

Cover the bottom of a large cast iron skillet with onions and then lay asparagus spears over the onions. Baste asparagus with your butter and garlic mixture. Place the uncovered skillet or baking dish on the top grate grill and close the cover.  Close the smoker and cook for about an hour or until the asparagus is tender.
