INGREDIENTS:
(1 lb.) Smoked ham shank
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped onions
2 (15 oz) cans Great Northern beans, drained, rinsed
5 cups low-sodium chicken broth
1/2 tsp salt
1/2 tsp ground black pepper
DIRECTIONS:
1. Spray a 3-1/2 to 4-quart-size slow cooker with cooking spray. Place ham shank in slow cooker; add in all remaining ingredients.
2. Cover; cook on LOW 5 to 6 hours or until ham shank is tender.
3. Remove ham shank; cut into small pieces. Stir into slow cooker. To thicken: Mash some of the beans with a fork.
TIP:
Optional: For more flavor, add 1 bay leaf the last hour of cooking time and remove bay leaf when finished cooking.
Yield: 6 Servings.
