Grilled Peach-Pork Salad is an unusual but delicious (35) minute recipe that uses grilled peaches with grilled pork tenderloin. You’ll always want grilled peaches once you’ve tasted these. Summary: Pork Tenderloin and peaches are cubed then placed on skewers; kabob-style and grilled. The cooked pork and peaches are then coated with a honey and orange juice mixture and mixed with salad greens for a fabulous and flavorful meal. This is also a healthy, low calories, low fat, low carbohydrates, low sodium, low cholesterol, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (6 SmartPoints), (5 PointsPlus) recipe. INGREDIENTS:
(1 lb) pork tenderloin
2 medium-size peaches or nectarines
2 Tbsp honey
2 Tbsp orange juice
1 Tbsp low-sodium soy sauce
1/2 tsp curry powder
1/4 tsp ground black pepper
3 cups torn Bibb lettuce
3 cups fresh baby spinach leaves
1/4 cup bias-sliced green onions
7 (10″) skewers
DIRECTIONS:
1. Trim fat from tenderloin and discard fat. Cut tenderloin into 1″ cubes. Pit the peaches and cut into 1″ cubes. On the skewers, thread the pork cubes. On three more skewers thread the peach cubes. For a Charcoal Grill: Preheat grill to medium and place skewers on the rack of an uncovered grill directly over coals. Grill pork for 10 to 12 minutes or until slightly pink in the center, turning occasionally. Grill peaches for 8 to 10 minutes or until browned.
(For a Gas Grill: Preheat grill. Reduce heat to medium. Place skewers on grill rack over heat. Cover and grill as directed).
2. Meanwhile, in a large bowl stir together the honey, orange juice, soy sauce, curry powder and black pepper. When skewers are done, remove pork and peaches from skewers and place in honey mixture; toss to coat.
3. To Serve: Arrange lettuce and spinach on 4 serving plates. Arrange pork and peaches evenly over greens. Sprinkle with green onions.
Yield: 4 Servings.
Serving Size: 1-1/2 cups lettuce + 3/4 cup pork mixture + 1 tablespoon green onions; (2-1/4 cups total).
