Serves 6 to 8
8 oz. Rotini, Twists or Spirals, uncooked
4 medium ripe tomatoes, peeled, seeded and chopped
1/2 cup sliced green onions (scallions)
1/2 cup peeled, seeded and chopped cucumber
1 clove garlic, minced
2 tbsp. chopped cilantro, or 2 tsp. dried cilantro
2 tbsp. olive oil
1 tbsp. red or white wine vinegar
1 tsp. salt
Cayenne pepper to taste
Prepare pasta according to package directions; drain. Combine pasta with remaining ingredients. Cover and chill at least 1 hour.
