Ingredients:
- 1 cup sugar
- 3 tablespoons minute tapioca
- 2 cans tart, pitted cherries
- ¼ teaspoon almond extract
- Butter
- Pastry for 2-crust pie
Directions:
- Mostly drain the cherries, reserving ½ cup of the juice
- In a large bowl, mix the sugar and tapioca
- Add cherries, juice and almond extract
- Let mixture stand for 15 minutes
- Prepare pie crust
- Pour the cherry mixture into the crust
- Dot with butter before adding the top crust
- Place foil strips around the edges of the crust
- Bake at 425 degrees for 35 minutes
- Remove foil and reduce heat to 375 for 30-40 minutes
