Crockpot Vegetable Chili is a delicious, easy and hearty slow cooker recipe. It is a meatless chili that is packed with vegetables. Ingredients include: (3) different varieties of beans, zucchini, tomatoes, corn, onion, cheese and bell peppers. It is also a healthy, low fat, low calories, low sodium, low cholesterol, low carbohydrates, low sugars, heart-healthy, diabetic-friendly, Weight Watchers (5 SmartPoints), (4 PointsPlus) and vegetarian recipe. INGREDIENTS:
(4 cups) fat-free, low-sodium vegetable broth
1 (28 oz) can diced tomatoes, undrained
1 (15 oz) can black beans, drained, rinsed
1 (15 oz) can garbanzo beans, drained, rinsed
1 (15 oz) can kidney beans, drained, rinsed
1 onion, chopped
1 zucchini, chopped
1 green pepper, seeds removed, chopped
1 cup frozen corn
1 (1-1/4 oz) envelope taco seasoning mix
1 (6 oz) box Velveeta®, cut into 1/2″ cubes
DIRECTIONS:
1. Combine all ingredients except Velveeta in a slower cooker; cover with lid.
2. Cook on HIGH 3-1/2 to 4 hours or LOW 5 to 6 hours.
3. Stir in Velveeta; cook, covered, 10 minutes or until cheese is completely melted. Stir before serving.
Yield: 14 servings.
