Ingredients:
- 1 pound boneless, skinless chicken breast halves
- 1/4 cup milk
- 1/4 cup breadcrumbs
- 3 1/2 tablespoons butter
- 1/2 cup chicken broth
- 1 cup whipping cream
- 3/4 cup grated parmesan cheese
- 1/4 cup chopped fresh basil
- 1/8 teaspoon course-ground black pepper
Directions:
- Place milk and breadcrumbs in separate shallow bowls.
- Dip each piece of chicken in the milk, then coat with the breadcrumbs.
- In a skillet over medium heat, fry chicken in butter on both sides until golden brown and juices run clear.
- Remove from skillet and keep warm.
- Add the broth to the skillet and bring to a boil over medium heat.
- Stir to loosen browned bits from the pan.
- Keep stirring and add the whipping cream .
- Boil for 1 minute, then reduce heat.
- Add the parmesan cheese, basil & black pepper.
- Simmer and stir until heated through.
- To serve, pour sauce over the chicken.
