Asian Chicken Kabobs

Prep Time: 35-40 Minutes.
Cooking Time: 8-10 Minutes.

INGREDIENTS:

1 (1.25 oz) envelope garlic & herb marinade mix
1/4 cup apple cider vinegar
2 Tbsp sesame oil
2 Tbsp water
(2 lb) boneless, skinless chicken breasts, cut into (1-1/2″) pieces
2 Tbsp creamy peanut butter
1/3 cup Asian toasted sesame salad dressing
(2 each) green and yellow bell peppers, each cut into 12 pieces
1 large red onion, cut into 12 wedges
Shredded Lettuce, (optional)

DIRECTIONS:

1. Mix first 4 ingredients together in a medium-size bowl until blended. Add in the chicken; stir to evenly coat. Refrigerate 20 minutes to marinate. Meanwhile, mix peanut butter and salad dressing together until blended.

2. Preheat grill to medium-high.

3. Remove chicken from marinade; discard marinade. Thread chicken, peppers and onions alternately onto 12 skewers.

4. Grill (8-10) minutes or until chicken is done, turning occasionally and brushing with peanut butter sauce for the last few minutes. Serve with shredded lettuce, if desired.

Yield: 6 Servings.
