RECIPE
- 3 large Granny Smith apples
- 3 tbsp lemon juice
- 3 eggs
- 1 cup sugar
- 1 cup flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp baking soda
- butter for greasing the pan
Preheat oven to 350 degrees. Grease a springform pan generously with butter.
Peel and core the apples.
Slice into bite-sized pieces. In a medium mixing bowl toss apples with lemon juice thoroughly to coat. Set aside.
In a larger mixing bowl, whisk the eggs until frothy.
Gradually whisk in sugar, mixing thoroughly to ensure the sugar dissolves into the eggs.
With a mixing spoon, stir the flour, baking soda, cinnamon and nutmeg into the egg mixture.
Stir until just combined. Add apples into batter, and mix only until apples are coated.
Pour batter into pan, and spread evenly.
Bake 35 to 45 minutes or until toothpick inserted into center comes out clean. Remove from oven,
and allow to cool before removing the springform and serving. Dust with powdered sugar or garnish with whipped cream.
