This is another of my Mom’s recipes.  When I was a kid, we didn’t have much money so my dad would go to the local orchard every fall and buy a couple boxes of the less expensive bruised apples. We kids didn’t know any better and they were fine for baking or making applesauce.

I remember my Mom and Dad making this recipe together.

RECIPE

Topping:

  • 2 sticks butter (1 cup)
  • 2 cups sugar
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • dash salt

Filling:

  • 8 cups pared sliced apples
  • 1/2 cup orange juice

Preheat oven to 375.  Grease a 9″ X 13″ pan.  Make the topping first and set it aside before you prepare the apples so they don’t get a chance to turn brown.

Cut butter into the sugar with a pastry blender or fork.

Add flour, cinnamon, nutmeg, and salt. Blend well.

Set topping aside.

Pare, core, and slice the apples.

Mound the apples in the pan.

Pour orange juice evenly over the apples. Spread topping evenly and press down very gently with a fork.

Bake 40 – 45 minutes.
