Holy Toledo. I cannot believe we’re here at Thanksgiving week. For the first time in about 19 years I don’t have holiday décor up before Thanksgiving Day. I think this season we will mark it up to a new job. Frankly put, I’m running a tad late!
It does not, however, put a damper on the big dinner coming our way this week.

Oh my goodness we’ve got regular turkey, smoked turkey and all the fixings. Folks frequently want to know what kind of pie we’re having, so I’ll tell you, its lemon chess, pumpkin and sugar free apple.

I’m already thinking about the leftovers and what we’re going to be making with those lovelies. I thought to myself, chicken zucchini casserole. This recipe is made with stuffing. Why not make your own and turn this into a leftover meal for the dressing and turkey! In fact, I’ve got a great idea brewing for a recipe. Gotta’ stop and pen. OK, got that jotted down. I’m thinking of a casserole made with this base, but going in a totally different direction from there. Lookout leftovers.

Certainly play with this recipe and find ways, like I am, to re-write the format into something totally different. One night you’ll want to be wrapping gifts for the tree, or watching a Lifetime movie. Believe me having dinners in the freezer for this time of the year are almost a pre-requisite. We even put chocolate chip cookie dough in the freezer this week, perfect for nights of coffee and cookies.
Another great tip is to pick up the small aluminum pans with lids at the dollar tree stores. Perfect for 2 people at home. You’ll have 4 meals out of 1 casserole recipe.

This casserole recipe works great in the freezer too. The number at our household is increasing again as Phillip heads home for the holidays. He returns to campus after Christmas. That means more cooking on the home-front. No problem, as we always cook in big amounts. Probably a few more pots of soups and stews headed our way.

All this chatter makes me want to stay up late tonight making more goodies. However with work tomorrow, that’s not going to work. I hope your Thanksgiving was outstanding, full of family and friends and lots of social distancing!!!

Chicken Zucchini Casserole
2 stovetop chicken stuffing mixes
3 cups shredded zucchini (skins left on)
3 cups chopped chicken or turkey
1 stick of butter, melted
1 can cream of chicken soup
1-2 cups shredded cheddar cheese
2 ½ cups milk

This will fill a large 9 x 13 baking dish or you can make it into (2) 8 x 8’s. Baking one and freezing the other. Don’t forget to spray the baking pans, mix everything together and place into bakeware. Bake at 350 degrees for about one hour. Serves 8-10.
