Baked Chicken Tenders is a quick and easy to make (28) minute recipe for a delicious entree. Ingredients include a made from scratch coating and batter for the tenders which are then baked. Optionally serve with a salad or slaw and vegetable to make it into a meal. This is also a healthy, low fat, low calories, low carbohydrates, low sugars, low sodium, diabetic-friendly and Weight Watchers (2 SmartPoints), (4 PointsPlus) recipe. Makes (4) servings. Prep Time: 20 Minutes.
Cooking Time: 8 Minutes.
Total Time: 28 Minutes.

INGREDIENTS:

3/4 cup quick cooking oatmeal
1/4 cup shredded Parmesan cheese
1/2 tsp dill weed
1/4 tsp ground black pepper
1 pinch salt
1 egg white
1/4 cup skim milk
1 lb boneless, skinless chicken tenderloins
Honey-mustard and/or barbecue sauce, optional

DIRECTIONS:

1. Process oats, Parmesan, dill weed, black pepper and salt in a food processor until a coarse powder is formed, about 1 minute. Pour onto a large plate or wide shallow dish.

2. Whisk together egg white and milk in another wide shallow dish. Dip each chicken tender into the egg mixture allowing excess to drip off. Place in oat mixture and coat each chicken tender making sure all sides are covered.

3. Place chicken tenders on a foil-lined baking sheet sprayed with non-stick cooking spray. Lightly spray chicken tenders with cooking spray. Broil on high for 4 minutes, turn and broil another 4 minutes or until golden brown.

4. If desired, serve with honey-mustard or barbecue sauce. Optional: Add a salad and/or your favorite side dishes if desired to round it into a meal.
