Ingredients:
3 tbsp. oil
1/2 c. thinly sliced onion
10 eggs
1 c. chopped fresh spinach
1/2 c. parmesan cheese
1 tbsp. parsley
1 clove garlic
1 tsp. salt
1/4 tsp. pepper

You may also add cooked ham, sausage, or crumbled bacon, if desired.
Preheat oven to 350°F. Heat oil in large skillet with heat resistant handle. Add onion; sauté for 5 minutes. In bowl, combine remaining ingredients. Beat well with fork. Pour into skillet with onion. Cook over low heat for about 3 to 5 minutes or until eggs are set around outside.Bake uncovered 10 minutes or until top is set. With spatula, loosen from bottom and around edges. Slide onto serving platter. Cut into wedges.
Serves 4 to 6.
